3rd Generation Family Business Brante in Bad Oeynhausen / Germany

Mr Andreas Brante & Mrs Sabine Marzian-Brante took over the business in 1994. To distinguish themselves from the rest, they aimed for a unique selling feature: the typical mineral brine (saltwater) from the therapeutic baths in their home town. Inventive recipies for bread and buns, highly qualified personnel and extraordinary shop fitting all form part of  the immense growth of  their business.

The owners believe in traditional values and do not compromise when it comes to quality, trust and customer service. This consistency also applies to  the design of their shops. The new café in Klosterstrasse moved from one end of the street to another  expanding from 30sqm to 100sqm. After the  € 200.000 relocation, the shop now offers 30 indoor and 18 outdoor seats and is equipped with only the best and the finest materials up to the wallpaper. Unique feature and sight is an expensive 15 sqm salina inside the shop which provides an inimitable ambiance and climate.

Korte Einrichtungen developed the sophisticated concept. One of the highlights is an „extractable“ sales counter. The pull-out presentation moves the merchandise towards the passersby and offers an excellent display of the merchandise. „You will be successful only when you do it right. Don´t save money in the wrong places“ states Brante in view of his clearly increased sales.

The business was founded in 1934, and nowadays it has 8 sales outlets with a total staff of 50. For details see www.FeinBaecker-Brante.de

Tricky Noodles

Together with Korte Einrichtungen, Birgit & Harald Laufs of Lange Bakery from Salzkotten / Germany developed an efficient and successful noodle concept.

Often enough  the question is how to push sales in the gastro sector without increasing labor and material costs. The Lange bakery owns  45 shops and has profound experience in the snack business which makes up 25% of their total turnover. Based on their knowledge, they approached the new field of „noodles“ focussing on a high quality product, efficient production and  easy finish in the shops. Noodles are pre-cooked in the production facilities and are distributed as individual servings to  the shops where the staff can easily finish the meal in the wok in less than 5 minutes. The system is simple: customers chose from 4 types of noodles and 5 different pastas - a bestseller for all age groups.

Apart from the product quality, the location itself is immensely important. Korte staff elaborated the concept for a space increase by one third, the counter has become an eye catcher in bright red color. At the same time, shop fitting is reduced to a minimum where the merchandise should catch the attention. Black color  dominates the areas where merchandise must be in the center of attraction and the black background of  the bread shelves offers another advantage: gaps cannot be seen easily.

Lange concentrates on what is essential. Production is centralized, the space in the counter is chosen wisely for efficient snack and baked goods presentation – and the noodles, of course.

Schaefer’s from Rodgau (Frankfurt area) delivers excellent snack competence – Korte Einrichtungen implemented a successful new concept

This baker had to work hard for his success with shops in difficult locations. But he made it into the modern new world of coffee & snack without losing track of his roots:  the high quality product. Three years ago, they never spent a thought on the gastronomical aspect but in the meantime Schaefer`s remodeled three of their six shops implementing an entirely new concept. Korte Einrichtungen found the right top-class means of presentation.

Schaefer’s took up the challenge and prepared every little detail well. Korte Einrichtungen gave lessons on snack preparation and presentation. For lunch they offer salads and baked goods. In the afternoon, snacks are reduced to one tray and the shelves are filled with cakes and round tortes.

Schaefer’s is extremely happy with their new success. Most of the increase is owed to the new modules, but even sale of the classic baked goods has increased by five percent.

Bakers in a similar situation may learn from Schaefer’s because it demonstrates that you can run a premium café without neglecting a bakery’s core competence. Schaefer’s policy: “We don’t do anything special – we do the simple things especially good.”
